We purchased two double doors and after installing them there appears to be light coming through the bottom between the doors as if the weatherstripping isn't long enough.

On double doors you would have received foam wedge pads that were to be installed on the astragal at the top and bottom to help properly seal the door. Without these you might experience this, but it is not because of the weatherstripping. See proper placement of foam wedge pads.
